SWEET RED ONION MARMALADE

Delicious served with sausages and mash!

Ingredients
Red onions, thinly sliced1kg
Cloves garlic, crushed2
Dried thyme½ tsp
Butter80g
Olive oil4 tblsp
Pinch dried chilli flakes
WHITWORTHS MOLASSES SUGAR120g
Red wine vinegar150ml/span>
Red wine100ml

PREPARATION METHOD

Put the onions, garlic, butter, olive oil, thyme and chilli flakes and WHITWORTHS MOLASSES SUGAR in a large pan and cook on a medium heat for 20 minutes.

Add the vinegar and wine and continue to cook for a further 30-40 minutes to reduce. Allow to cool, transfer into storage jars and refrigerate.

TOP TIPS

Serve with warmed goats cheese, or cheese on toast – delicious!
