Pre-heat the oven to 180°C / Gas Mark 4. Lightly grease 2 baking sheets.
Beat the WHITWORTHS CASTER SUGAR and butter in a large bowl for 2 minutes, until light and creamy.
Add the honey and egg and continue to beat until combined.
Add the spices and flour, beat to combine and finally add the oats and raisins.
Spoon the mixture onto the prepared baking sheets; you should be able to fit 6 cookies on each sheet.
Bake for 10-12 minutes, until golden.
When they are cooked, allow to stand for 2 minutes before transferring to a cooling rack.
